Fab as an Easter healthy treat or for the rest of the week when you’re back on track !
Super super easy so no excuses about time, no no no.
We’re basically chucking, mixing & bunging in the oven. It’s that simple…SERIOUSLY.
Here’s the important bit:
ALL of the below goes into one bowl..
Handful of hemp seeds, sunflower seeds and desiccated coconut
2/3 cup chopped brazil nuts
6 eggs
4tbsp coconut oil and coconut milk
6tbsp pure maple syrup
2tsp vanilla paste
1/2 cup coconut flour
1 cup chopped dates and apricots
1 tsp pink salt
1 tsp baking powder
Fold it all in with a fork, keep going until everything is WELL mixed together, mish, mash, mush
The next bit is pretty important too !
Grease a loaf tin with coconut oil/extra virgin olive oil
Pre-heat oven to 165 degrees
In we go for approx 45mins or basically until a knife comes out clean & sparkly !
Voila… Grain free, Dairy free, packed full of protein, healthy fats & super seeds.
Zero RUBBISH.
Keep it in a container and consume for Breakfast/Brunch/Lunch/Snack… ?
Top Tip
This is truly delish with spinach, baby plum tomatoes and either hummus or unsalted organic/grass fed butter & some thin slices of organic cheese….O..M..G… this one’s a keeper !!
